Jervaulx Blue (200g)
Description
A firm textured cheese with a gentle blue flavour made at Hawes Creamery using the milk from the farms of Wensleydale, in Yorkshire. The cows graze the sweet limestone meadows that are rich in wild flowers, herbs and grasses. It is this herbage that gives the milk, and hence the cheese, its special dales flavour.
Hawes replaced the old Blue Wensleydale recipe in 2010, and named it after Jervaulx Abbey to reflect the influence that the monks had in refining Wensleydale cheese. Wensleydale has been made in Yorkshire for over a thousand years, but after the Norman invasion the monks introduced some continental cheese making techniques to the recipes.
