Berkswell Baby (500g)

A hard cheese made from sheeps milk, similar to a pecorino. It has rich and complex flavours which change throughout the year, starting off as moist and fresh tasting then getting crunchy, salty and stronger towards the year end. Most people don't think of cheese in terms of seasonality but this is a great example of the differences the time of year can make to flavour.
