Green's Mature Cheddar (200g)

Mr Lloyd Green has a farm in Glastonbury, and one day he was passing our shop in Prestwich (so he was either really lost or his tractor had run away with him) and popped in to tell us about his cheese. We thought it was fantastic so got it on the shelf as soon as we could.

It always comes in cloth bound truckles of around 25kg and has varied in age from 10 to 14 months old. The youngsters are fresher and lighter, the more mature cheeses have a stronger bite and more mustiness that comes with the cloth bound ripening. All are delicious and good examples of a real old fashioned cheddar.
