This is at the pinnacle of English artisan cheese making. 

David and Jo Clarke have a herd of cows and they decided to make cheese with the milk from this herd.  As red leicester had not been made on a farm in Leicestershire since the 1950s they probably didn't spend too long wondering what type of cheese to make. 

This is an unpasteurised cheese, the only red leicester to be made on a farm in Leicestershire with the milk from their own herd - it ticks all the boxes for artisan cheese AND it tastes as good as it sounds.  If you think that red leicester is the vac-packed brick of red sticky stuff that comes from supermarket try this to see how much flavour the real thing has.
