Description
A rich cheese with a gentle flavour. It is soft in the middle and when it is ripe becomes liquid beneath the bloomed rind. The taste has the complexity that usually comes with sheeps milk cheeses with a slight herby flavour and even a little nuttiness.
This is one of the most glorious of the modern British cheeses and a real example of why we should treasure artisan cheeses.
Fabulous with a good crusty bread, and if you can give it a few hours out of the fridge before you eat it you will get the best out of it in terms of
flavour and texture.
