Manchego (200g)
Description
A sheeps cheese from the land of Don Quixote. Our manchego is over a year old so it has matured to give a full flavour with lots of complexity.
Spanish tradition is that it is eaten with membrillo (quince paste) so that the moist fruitiness contrasts with the dry bite of the manchego. We think Gordon Ramsay included this combination in one of his recent recipe books as a starter. Thread alternate cubes onto skewers with kalamata olives and serve over a bed of rocket drizzled with extra virgin olive oil. Beautiful to look at, impressive taste combinations and quick to produce.
